Lazy Day Off and Skillet Brunch

Ahhh, a lazy day. We are taking it easy today because we have a lot planned for this weekend (I can't wait to post about it) and we have a busy 2 or so months ahead. My husband will be doing a lot of travelling for business and I'm venturing into some new activities I'm really excited about.
Not that we need a reason or excuse to have a lazy day, but it makes me feel better to justify lying on the couch and taking midday naps :)
Today, we were in the mood for something brunch-y. Since trying to get groceries on a public holiday (or, for that matter, a Sunday) is impossible, I had to just use what we already had. We really enjoyed our skillet brunch and what is even better is that there are hundreds of different ways to do this. You can be as creative as you want.
Skillet Brunch
Serves 2
5-6 small potatoes, cut into 1/8" slices
4-6 oz. of sausage, casings removed
1 small onion, chopped finely
3 cloves garlic, minced
1 tablespoon butter
2 tablespoons chopped parsley
2 eggs
2 pitas
some grated Parmesan cheese, for serving
salt and pepper
First, prepare the vegetables and sausage. I used a spicy Italian sausage (a lot like Chorizo) that was a hard sausage, meaning you can't crumble it. Feel free to use crumbled sausage, too... it would work just as well.
Next, melt the butter in a heavy-based skillet on medium-high heat. Once the butter is melted, add the sausage and brown it (5-7 minutes). Once the sausage is browned, remove it with a slotted spoon and set the sausage on a plate covered with a couple of paper towels to drain away excess fat. Do not discard the fat in the skillet.
Heat the skillet over medium heat, then add the potatoes and plenty of salt and freshly ground pepper. Stir everything around, making sure to coat the potatoes with the oil in the skillet. Cook the potatoes over medium heat until they start to brown and become soft (about 10-15 minutes).
Once the potatoes are becoming brown, toss in the onion and garlic. Stir, and cook for an additional 5 minutes.
While the skillet is cooking, fry two eggs in a separate skillet. I use non-stick to do this, so I don't need any oil; however, if you are not using a non-stick pan, be sure to coat the bottom of the pan in some vegetable oil to prevent the eggs from sticking.
Meanwhile, split two pitas down the middle and toast them in a toaster.
Once the onions have become transparent, add the sausage back to the pan and also throw in the chopped parsley.
Stir everything around and let it cook on medium-low heat for 3-5 minutes while the other elements are coming together.
This was a very satisfying brunch and the perfect way to spend a lazy day. I hope you try this recipe and try some different combinations along with it. I would also love to hear your variations of this dish!

Place the toasted pita slice on a plate. Spoon the potato and sausage mixture over the pita and place the fried egg on top. Sprinkle some fresh grated Parmesan over the dish and serve immediately.
